Javier Golondrino's lot is our first of the year from South Huila's main annual harvest, which fell between October and December 2016. Javier's two hectare farm sits at a very high altitude by Huila's standards (over 1900masl!), and the cooler temperatures at this altitude have lead to a more dense, sweet and complex coffee.
Javier has leveraged his farm's unique location by processing the cherries into dried parchment coffee with great care. You can clearly taste the fruits of his labour through the cleanliness and expressiveness of this coffee.
